Description

A warm and comforting soup featuring creamy textures and bold flavors from Italian sausage, tender pasta, and zesty tomatoes.


Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 cup ditalini pasta
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned. Remove the sausage from the pot and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until fragrant, about 2-3 minutes.
  3. Stir in the diced tomatoes with their juices, chicken stock, and the browned sausage. Let the mixture simmer for about 10 minutes.
  4. Bring the pot back to a boil and add the ditalini pasta. Cook according to the package instructions until al dente.
  5. Stir in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

For a lighter soup, consider using half-and-half or whole milk instead of heavy cream. Cook ditalini pasta separately if storing leftovers to avoid mushiness.
