- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 cup ditalini pasta
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, sauté the chopped onion and minced garlic until fragrant, about 2-3 minutes.
- Stir in the diced tomatoes with their juices, chicken stock, and the browned sausage. Let the mixture simmer for about 10 minutes.
- Bring the pot back to a boil and add the ditalini pasta. Cook according to the package instructions until al dente.
- Stir in heavy cream and grated Parmesan cheese until melted. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
For a lighter soup, consider using half-and-half or whole milk instead of heavy cream. Cook ditalini pasta separately if storing leftovers to avoid mushiness.
