- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese
- 1 cup ditalini pasta
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned. Remove and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and the onion turns translucent.
- Stir in the diced tomatoes with juices, chicken stock, and browned sausage. Add dried basil and oregano. Let simmer for about 10 minutes.
- Add ditalini pasta to the pot and cook according to package instructions until al dente.
- Finally, stir in the heavy cream and grated Parmesan cheese until melted. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
Consider cooking the pasta separately if storing for leftovers to prevent mushiness. You can use spicy sausage for a kick or replace heavy cream with half-and-half for a lighter option.
