A comforting and flavorful soup combining rich creamy broth, Italian sausage, tender pasta, and fresh spinach.

- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 ounces pasta (such as fusilli or rotini)
- 2 cups fresh spinach leaves
- Salt and pepper to taste
- Optional garnish: chopped fresh parsley
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Remove the sausage with a slotted spoon and set it aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent (about 3-4 minutes).
- Pour in the chicken broth and bring it to a boil.
- Add the pasta to the boiling broth and cook according to package instructions until al dente.
- Once the pasta is cooked, reduce the heat to low and stir in the cooked sausage.
- Add the heavy cream and Parmesan cheese, stirring continuously until the cheese is melted and the soup is creamy.
- Stir in the fresh spinach leaves until they wilt into the soup (about 2 minutes).
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with chopped fresh parsley, if desired.
- Serve hot and enjoy!
Notes
For a lighter soup, consider using half-and-half instead of heavy cream.
