Description

A comforting and flavorful soup combining rich creamy broth, Italian sausage, tender pasta, and fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 ounces pasta (such as fusilli or rotini)
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste
  • Optional garnish: chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Remove the sausage with a slotted spoon and set it aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent (about 3-4 minutes).
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the pasta to the boiling broth and cook according to package instructions until al dente.
  5. Once the pasta is cooked, reduce the heat to low and stir in the cooked sausage.
  6. Add the heavy cream and Parmesan cheese, stirring continuously until the cheese is melted and the soup is creamy.
  7. Stir in the fresh spinach leaves until they wilt into the soup (about 2 minutes).
  8. Season with salt and pepper to taste.
  9. Ladle the soup into bowls and garnish with chopped fresh parsley, if desired.
  10. Serve hot and enjoy!

Notes

For a lighter soup, consider using half-and-half instead of heavy cream.
