- 1 cup long grain white rice
- 4 tablespoons butter
- 1 small onion, finely diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 1/4 cups chicken stock
- 1 1/2 cups milk (2% recommended, divided)
- 1 tablespoon lemon juice
- 1/2 cup finely grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large saucepan, melt the butter over medium heat. Add the finely diced onion and sauté until soft and translucent.
- Incorporate the rinsed rice, garlic powder, and salt into the pan, stirring for about 2 minutes.
- Pour in the chicken stock and 1 cup of milk, bring to a gentle boil, reduce heat, cover, and simmer for 18-20 minutes.
- Stir in the remaining milk, lemon juice, and parmesan cheese until melted and creamy. Garnish with chopped parsley before serving.
Notes
Use freshly grated parmesan for the best flavor and texture. Adjust lemon juice to taste for desired zing.
