- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken stock
- 1 cup heavy cream
- 3 tablespoons peri-peri sauce
- 1 teaspoon lemon juice
- 2 cups cooked white rice
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet and sear the chicken for 3-4 minutes on each side until golden brown.
- Add chopped onion and minced garlic to the skillet and sauté until translucent.
- Pour in chicken stock, heavy cream, peri-peri sauce, and lemon juice; stir and simmer for 5-7 minutes until the sauce thickens.
- Return the seared chicken to the skillet, reduce heat, and simmer for 10-15 minutes until cooked through.
- Serve the chicken over rice, topped with the creamy sauce and garnished with parsley.
