Instructions

  1. Gather Ingredients: Start by pulling all the ingredients from your pantry and fridge.
  2. Sauté Onions and Garlic: In a large pot over medium heat, melt the butter. Add chopped onions and sauté until soft and translucent (4-5 minutes), then stir in minced garlic for another 30 seconds.
  3. Add Potatoes and Broth: Toss in diced potatoes with vegetable broth. Bring to a gentle boil.
  4. Simmer for Tenderness: Reduce heat and let it simmer for about 20 minutes or until potatoes are fork-tender.

Notes
