- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable stock
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
- Chives or parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced potatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are soft, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the heavy cream, and season with salt and pepper to taste.
- Heat the soup through and serve hot, garnished with chives or parsley.
Notes
For a vegan version, replace heavy cream with coconut milk. Pick the right type of potatoes for better texture.
