Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger; cook for another minute until fragrant.
- Add the red curry paste, stirring well to combine. Cook for 2 minutes.
- Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.
- Add the fresh greens and cook for about 5 minutes until wilted.
- Season with salt and pepper to taste.
- If using, add the fluffy dumplings just before serving.
Notes
For a more pronounced coconut flavor, opt for full-fat coconut milk. Adjust the spice level by varying the amount of red curry paste used.
