Description

A delightful dish combining creamy sauce and zesty lemon flavor with tender shrimp and vibrant spinach, perfect for special occasions or cozy weeknights.


Ingredients

  • 1 cup orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add orzo and cook until al dente; drain, reserving a cup of pasta water.
  2. In a skillet over medium heat, melt olive oil and butter. Season shrimp and cook for 3-4 minutes until pink; remove from skillet.
  3. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in heavy cream, lemon juice, and zest. Simmer for 3-5 minutes until slightly thickened.
  5. Add fresh spinach and stir until wilted, then mix in cooked orzo and reserved pasta water to desired creaminess.
  6. Stir in grated Parmesan cheese until creamy. Adjust seasoning with salt and pepper, then serve hot.

Notes

For best results, don’t overcook the shrimp and always reserve pasta water for adjusting sauce consistency.
