Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the fettuccine according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  4. Stir in sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
