- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup long-grain white rice
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional for heat)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes per side until golden brown. Remove the chicken and set aside.
- In the same skillet, melt the butter over medium heat. Add chopped onion and cook for 2-3 minutes until softened.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the skillet, and bring to a simmer.
- Stir in heavy cream, whole milk, thyme, parsley, basil, and optional crushed red pepper flakes. Let simmer for 5 minutes to thicken.
- Add uncooked rice to the skillet and stir to combine. Place chicken breasts on top of the rice mixture.
- Sprinkle shredded cheddar cheese evenly over chicken breasts.
- Cover with a lid or foil and transfer to the oven. Bake for 25-30 minutes, or until chicken is cooked through and rice is tender.
- Let rest 5 minutes before serving. Garnish with chopped parsley.
Notes
For a lighter dish, use half-and-half instead of heavy cream. Adjust seasoning to taste.
