- 1 cup white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 3 cloves garlic, minced

Instructions
- Start by heating olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper. Once hot, add the chicken and sear until both sides are golden brown, about 5 minutes. Remove from skillet and set aside.
- Reduce heat to medium and add diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until softened and fragrant.
- Stir in the white rice, allowing it to toast slightly for enhanced flavor.
- Pour in chicken broth, bring to a simmer, and return seared chicken thighs to the skillet, cover, and cook for about 20 minutes until rice is tender and liquid is absorbed.
- Remove the lid, stir in heavy cream, and simmer for a few more minutes until the sauce thickens slightly.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, marinate the chicken ahead of time and avoid overcrowding the pan while searing. You can substitute half-and-half for a lighter sauce.
