Creamy Tomato Pasta

Description

Creamy tomato pasta made in one pot with a velvety tomato sauce, parmesan, garlic, and fresh herbs. A 30-minute dinner classic.


Ingredients

Scale

8 oz penne or fettuccine pasta

1 tbsp olive oil

2 cloves garlic, minced

1/2 onion, finely chopped

1 cup crushed tomatoes or tomato sauce

1/2 cup heavy cream

1/4 cup grated parmesan cheese

1/4 tsp red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil, chopped (for garnish)

1/2 cup reserved pasta water


Instructions

1. Boil the pasta until al dente. Reserve 1/2 cup of the water and drain.

2. In a pan, heat olive oil and sauté onion for 3–4 minutes. Add garlic and cook for 1 minute.

3. Add crushed tomatoes and simmer for 5–6 minutes.

4. Stir in heavy cream, salt, pepper, and red pepper flakes.

5. Add pasta and a bit of reserved water. Stir to coat.

6. Mix in parmesan and garnish with fresh basil.

7. Serve immediately with extra cheese if desired.

Notes

You can substitute coconut cream for a dairy-free option.

For protein, add grilled chicken or shrimp to the finished dish.

Make it vegan by using plant-based cream and nutritional yeast.
