Description

Ingredients

  • 8 oz pasta (fettuccine, penne, or your choice)
  • 2 cups mushrooms, sliced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the fresh spinach and cook until wilted, about 2 minutes.
  5. Reduce the heat to low and pour in the heavy cream, stirring to combine.
  6. Add the Parmesan cheese and mix until melted and creamy.
  7. Toss in the cooked pasta, season with salt and pepper, and stir until the pasta is well coated with the sauce.
  8. Garnish with fresh basil if desired and serve warm.
