- 8 oz pasta (fettuccine, penne, or your choice)
- 2 cups mushrooms, sliced
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned, about 5-7 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Reduce the heat to low and pour in the heavy cream, stirring to combine.
- Add the Parmesan cheese and mix until melted and creamy.
- Toss in the cooked pasta, season with salt and pepper, and stir until the pasta is well coated with the sauce.
- Garnish with fresh basil if desired and serve warm.
