Ingredients

- 1 package of gnocchi
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute.
- Pour in the vegetable broth and bring to a simmer.
- Add the gnocchi and cook according to the package instructions.
- Once the gnocchi are cooked, stir in the heavy cream or coconut milk and spinach.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For a lighter version, substitute heavy cream with coconut milk. Store leftovers in an airtight container in the fridge for up to 4 days.
