- 1 head of cauliflower, cut into florets
- 1 head of broccoli, cut into florets
- 2 large carrots, sliced
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 2 cups shredded cheese (cheddar or a blend)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- 1/4 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly steam the cauliflower, broccoli, and carrots until tender but still crisp, about 5-7 minutes.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, then gradually whisk in milk until the mixture thickens.
- Remove from heat and stir in shredded cheese until melted. Season with salt, pepper, garlic powder, and onion powder.
- Combine steamed vegetables with the cheese sauce and stir to coat.
- Transfer the mixture to a greased baking dish and sprinkle breadcrumbs on top if desired.
- Bake for 25-30 minutes or until bubbly and golden.
