- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup vanilla pastry cream
- 1/2 cup granulated sugar for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, mix together the flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients, mixing until just combined.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool completely.
- Create a small indentation in the center of each cookie and fill it with vanilla pastry cream.
- Sprinkle a thin layer of granulated sugar on top of the pastry cream.
- Using a kitchen torch, caramelize the sugar until bubbly and golden brown.
- Let them cool briefly before serving.
Notes
Be careful while caramelizing sugar; monitor closely to prevent burning.
