Description

A delightful twist on breakfast with crispy bacon, fluffy scrambled eggs, and gooey cheese in warm flour tortillas.


Ingredients

  • 2 slices thick-cut bacon
  • 2 large eggs
  • 1/8 teaspoon salt
  • Pinch of black pepper
  • 1 tablespoon unsalted butter
  • 1 large burrito-size flour tortilla
  • 1/3 cup shredded cheese (Mexican blend or medium cheddar)

Instructions

  1. Heat a medium non-stick skillet over medium heat. Add bacon slices and cook until crisp, about 5-7 minutes. Transfer to a paper towel-lined plate to cool and chop into bite-sized pieces.
  2. Wipe out skillet and whisk eggs with salt and pepper in a bowl until uniform.
  3. Return skillet to medium heat, melt butter, and pour in eggs; cook undisturbed for about 1 minute.
  4. Sprinkle half of the cheese over the eggs, place tortilla on top, and press down. Cook for an additional minute.
  5. Carefully flip the tortilla, sprinkle remaining cheese and chopped bacon on top, fold the tortilla in half, and cook until cheese melts and both sides are golden brown, about 2-3 minutes.
  6. Transfer to a cutting board, slice into triangles, and serve immediately.

Notes

Customize with salsa or avocado, and try different cheeses or spices to suit your taste.
