- 4 salmon fillets, skin removed
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons unsalted butter, melted
- 2 tablespoons Dijon mustard
- 1 lemon, cut into wedges, for serving
Instructions
- Preheat the oven to 400ยฐF (200ยฐC) and prepare a baking sheet with parchment paper or cooking spray.
- In a shallow dish, combine the Parmesan, panko, parsley, garlic powder, lemon zest, salt, and pepper.
- In a small bowl, mix the melted butter and Dijon mustard until smooth.
- Brush the top side of each salmon fillet with the butter-mustard mixture, then press the coated side into the breadcrumb mixture.
- Place salmon fillets crusted side up on the prepared baking sheet and bake for 12 to 15 minutes, until cooked through and golden brown.
- Serve immediately with lemon wedges for added brightness.
