Ingredients

  • 4 salmon fillets, skin removed
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons Dijon mustard
  • 1 lemon, cut into wedges, for serving

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC) and prepare a baking sheet with parchment paper or cooking spray.
  2. In a shallow dish, combine the Parmesan, panko, parsley, garlic powder, lemon zest, salt, and pepper.
  3. In a small bowl, mix the melted butter and Dijon mustard until smooth.
  4. Brush the top side of each salmon fillet with the butter-mustard mixture, then press the coated side into the breadcrumb mixture.
  5. Place salmon fillets crusted side up on the prepared baking sheet and bake for 12 to 15 minutes, until cooked through and golden brown.
  6. Serve immediately with lemon wedges for added brightness.
