- 4 salmon fillets, skin removed
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons unsalted butter, melted
- 2 tablespoons Dijon mustard
- 1 lemon, cut into wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a shallow dish, combine the Parmesan cheese, panko breadcrumbs, parsley, garlic powder, lemon zest, salt, and black pepper. Mix until well combined.
- In a small bowl, combine the melted butter and Dijon mustard, stirring until smooth.
- Brush the top side of each salmon fillet with the butter-mustard mixture, ensuring they are evenly coated.
- Press the buttered side of the salmon fillets into the Parmesan-breadcrumb mixture, pressing firmly to ensure the coating sticks.
- Place the salmon fillets, crusted side up, onto the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.
- Serve immediately with lemon wedges on the side for squeezing over the top.
