Description

A delicious and crispy Bang Bang Chicken Bowl featuring crunchy chicken bites, a creamy spicy sauce, served over a refreshing bed of rice and veggies.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 tablespoons vegetable oil (for frying)
  • 1/2 cup mayonnaise (for Bang Bang Sauce)
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded cabbage
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped scallions
  • 2 tablespoons sesame seeds
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the chicken pieces with buttermilk. Cover and refrigerate for at least 30 minutes to marinate.
  2. In another bowl, whisk together the flour, cornmeal, salt, pepper, and garlic powder. Dredge the marinated chicken pieces in this mixture until fully coated.
  3. Heat vegetable oil in a skillet over medium-high heat. Fry the chicken in batches for about 4-6 minutes on each side until golden brown and crispy.
  4. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth to make the Bang Bang sauce.
  5. Assemble bowls by dividing rice and topping with cabbage, cucumber, carrots, and crispy chicken.
  6. Drizzle Bang Bang sauce over the chicken, sprinkle with scallions and sesame seeds, and serve with lime wedges.

Notes

For even better flavor, marinate the chicken overnight in buttermilk. Customize the sauce to adjust heat or sweetness to your liking.
