Description

Deliciously crispy on the outside and chewy on the inside, these apple cider cookies feature a unique nutty flavor from browned butter and warm spices.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a saucepan over medium heat until browned and nutty in aroma, then allow to cool slightly.
  3. In a mixing bowl, combine brown sugar, granulated sugar, and the browned butter. Beat in egg, apple cider, and vanilla extract until smooth.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

For thicker cookies, refrigerate the dough for 30 minutes before baking.
