- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1/4 cup flour
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine mashed potatoes, cheese, green onions, and season with salt and pepper.
- Form the mixture into small balls or patties, aiming for about 1-2 inches in diameter.
- In a separate bowl, beat the egg and place the flour and breadcrumbs in two other bowls.
- Dip each potato ball first in flour, then in egg, and finally coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the potato bites until golden brown on all sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve hot as an appetizer or snack with your favorite dipping sauces.
Notes
Use cold mashed potatoes for better shape. Don’t skip the flour for better coating adherence. Fry in batches for optimal crispiness.
