A delightful fusion of creamy Alfredo sauce with crispy chicken, perfect for family dinners or gatherings.
Ingredients
- Boneless, skinless chicken breasts – 2 (6-8 oz each)
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Paprika – 1/2 tsp
- Garlic powder – 1/4 tsp
- All-purpose flour – 1/4 cup
- Large eggs – 2, beaten
- Panko breadcrumbs – 1 cup
- Vegetable or canola oil – 3-4 cups
- Unsalted butter – 1/2 cup (1 stick)
- Garlic, minced – 4 cloves
- Heavy cream – 2 cups
- Freshly grated Parmesan cheese – 1 1/2 cups
- Salt (for sauce) – 1/2 tsp
- Black pepper (for sauce) – 1/4 tsp
- Freshly grated nutmeg – Pinch
- Fettuccine pasta – 1 lb
- Salt (for pasta water) – 2 tbsp
- Fresh parsley, chopped – 1/4 cup
- Extra grated Parmesan cheese (for garnish) – To taste
Instructions
- Prepare Chicken: Slice the chicken breasts horizontally and pound them to about 1/2 inch thickness. Season both sides with salt, black pepper, paprika, and garlic powder.
- Bread Chicken: Set up a breading station: one bowl with flour, another with beaten eggs, and a third with Panko breadcrumbs. Dredge each chicken cutlet first in flour, then in egg, and finally in Panko.
- Fry Chicken: Heat oil in a skillet to 350-375°F. Fry the breaded chicken for 4-6 minutes per side until golden brown and cooked through. Transfer to a wire rack to rest.
- Make Alfredo Sauce: In a skillet, melt butter. Add garlic and sauté for 1-2 minutes. Stir in cream and simmer until thick. Remove from heat and whisk in Parmesan cheese.
- Cook Pasta: Boil salted water and cook fettuccine according to package instructions. Reserve 1 1/2 cups of pasta water, then drain the pasta.
- Combine & Serve: Add fettuccine to the Alfredo sauce, tossing to coat. If thick, add pasta water to adjust consistency. Fold in sliced chicken, garnish, and serve.
Notes
Use freshly grated Parmesan for better flavor. Avoid overcrowding the pan when frying chicken.
