Ingredients

- 4 medium Russet potatoes (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the Russet potatoes, then cut them into even strips about half an inch thick.
- Soak the potato strips in cold water for at least 30 minutes.
- Drain and thoroughly dry the soaked potatoes with paper towels.
- Toss the dried potatoes with olive oil, minced garlic, salt, and pepper until well-coated.
- Spread the fries in a single layer on a parchment-lined baking sheet and bake for 25-30 minutes, flipping halfway through.
- Once golden brown, remove from the oven and sprinkle with grated Parmesan cheese while hot.
- Garnish with chopped parsley if desired and serve hot.
Notes
For a spicy kick, add red pepper flakes or adjust garlic to your taste.
