- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 tablespoon dried basil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Flatten the chicken breasts to an even thickness.
- In a shallow dish, mix flour, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, combine breadcrumbs, Parmesan cheese, dried basil, and garlic powder.
- Dip each chicken breast in the flour, then in the eggs, and finally in the breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Fry the chicken cutlets until golden brown, about 4-5 minutes per side.
- Transfer the cutlets to a baking sheet and finish cooking in the oven for 10 minutes.
- Serve hot with your favorite sides.
Notes
For a variation, consider using gluten-free breadcrumbs and almond flour. You can also bake the cutlets instead of frying for a lighter version.
