- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/4 cup olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness of about 1/2 inch.
- In a shallow bowl, combine the flour, salt, black pepper, oregano, and garlic powder.
- In another bowl, beat the eggs until smooth.
- In a third bowl, mix the breadcrumbs with the Parmesan cheese.
- Dredge each chicken breast in the flour mixture, shaking off any excess.
- Dip the floured chicken breast into the beaten eggs.
- Press the chicken into the breadcrumb mixture.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Cook the chicken breasts until golden brown on each side, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- In a small saucepan, melt the butter over medium heat and sauté the minced garlic for about 1 minute.
- Stir in the chicken broth and lemon juice, bringing the mixture to a simmer.
- Simmer for 3-4 minutes, allowing the sauce to thicken.
- Remove the skillet from the oven and transfer the chicken to a serving platter.
- Pour the garlic butter sauce over the crispy chicken and garnish with fresh parsley.
- Serve hot and enjoy!
Notes
For a lighter version, consider using less butter in the sauce or substituting chicken thighs for breasts.
