Ingredients

  • Salt and freshly ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup Panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour (for sauce)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (for sauce)
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. In a shallow dish, place the flour seasoned with salt and pepper. In a second dish, whisk the eggs and water together. In a third dish, mix the Panko breadcrumbs, Parmesan cheese, and Italian seasoning.
  4. Dredge each chicken breast in the flour mixture, dip it into the egg mixture, then coat it with the breadcrumb mixture.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken until golden brown, about 3-4 minutes per side, then transfer to the oven and bake for an additional 20-25 minutes.
  6. Melt butter in a saucepan, add minced garlic, and cook until fragrant.
  7. Stir in flour and cook for another minute before gradually whisking in chicken broth and cream. Cook until thickened.
  8. Stir in additional Parmesan cheese until melted. Season with salt and pepper as needed.
  9. Serve the chicken topped with the garlic cream sauce, garnished with parsley.

Notes

For extra crispiness, use Panko breadcrumbs and ensure chicken is dry before dredging.
