- 1 pound green beans, trimmed
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme (or fresh thyme, chopped)
- 1 tablespoon balsamic vinegar (optional, for finishing)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the peeled and cut carrots and trimmed green beans.
- Drizzle the olive oil over the vegetables and sprinkle the salt, black pepper, garlic powder, onion powder, and thyme.
- Toss the vegetables well to ensure they are evenly coated in the oil and seasonings.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and the edges are crispy, stirring halfway through.
- If desired, drizzle with balsamic vinegar in the last 5 minutes of roasting.
- Remove from the oven and let cool for a minute before serving.
Notes
Don’t overcrowd the pan for crispy results. Use fresh thyme for better flavor and experiment with seasonings as desired.
