Description

Deliciously crispy and nutrient-packed sweet potato and red lentil patties that can be served as a main course or appetizer.


Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 cup breadcrumbs or quinoa flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying
  • 1 avocado
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Boil the sweet potatoes in a pot of salted water until tender, about 15 minutes. Drain and mash until smooth.
  2. In a separate pot, cook the red lentils according to package instructions until soft, then drain.
  3. Combine the lentils with the mashed sweet potatoes, breadcrumbs or quinoa flour, onions, garlic, cumin, paprika, salt, and pepper in a large bowl. Mix well.
  4. Shape the mixture into small patties, roughly the size of your palm.
  5. Heat oil in a skillet over medium heat. Fry the patties for 4-5 minutes on each side until golden brown and crispy.
  6. For the avocado sauce, blend the avocado, cilantro, lime juice, and a pinch of salt until smooth.
  7. Serve the warm patties with the avocado cilantro sauce.

Notes

These patties are perfect for meal prep and can be frozen. Use enough oil for frying to ensure a crispy texture.
