Description
Deliciously crispy and nutrient-packed sweet potato and red lentil patties that can be served as a main course or appetizer.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1/2 cup breadcrumbs or quinoa flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Oil for frying
- 1 avocado
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Boil the sweet potatoes in a pot of salted water until tender, about 15 minutes. Drain and mash until smooth.
- In a separate pot, cook the red lentils according to package instructions until soft, then drain.
- Combine the lentils with the mashed sweet potatoes, breadcrumbs or quinoa flour, onions, garlic, cumin, paprika, salt, and pepper in a large bowl. Mix well.
- Shape the mixture into small patties, roughly the size of your palm.
- Heat oil in a skillet over medium heat. Fry the patties for 4-5 minutes on each side until golden brown and crispy.
- For the avocado sauce, blend the avocado, cilantro, lime juice, and a pinch of salt until smooth.
- Serve the warm patties with the avocado cilantro sauce.
Notes
These patties are perfect for meal prep and can be frozen. Use enough oil for frying to ensure a crispy texture.
