- 1 block extra-firm tofu, pressed and cut into cubes
- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 teaspoon sesame oil
- 1 cup brown rice
- 2 cups vegetable broth
- 1/4 teaspoon salt
- 1 avocado, sliced
Instructions
- In a medium bowl, mix together the cornstarch, all-purpose flour, garlic powder, salt, and black pepper. Toss the pressed and cubed tofu in this mixture until well-coated.
- Heat oil in a large skillet over medium-high heat. Once hot, add the coated tofu cubes and cook for about 8-10 minutes, turning occasionally, until all sides are golden brown and crispy. Remove from heat.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, minced garlic, and sesame oil.
- In a large pot, bring the vegetable broth to a boil. Stir in the brown rice and 1/4 teaspoon salt, reduce heat to low, cover, and let simmer for 15-20 minutes until the rice is tender. Fluff with a fork.
- In serving bowls, layer the cooked brown rice, avocado slices, and top with the crispy tofu cubes. Drizzle with teriyaki sauce and serve immediately.
Notes
Press tofu for 15-30 minutes for better crispiness. Use ripe avocados for optimal flavor.
