Description

A creamy, spicy pasta dish made with tender chicken, bell peppers, and a rich, cheesy sauce, perfect for family dinners or potlucks.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta (or pasta of choice)
  • Fresh parsley, chopped for garnish

Instructions

  1. Place chicken breasts in a bowl and drizzle with olive oil; season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub all over the chicken.
  2. In a skillet over medium heat, brown the chicken for 2-3 minutes on each side. This step locks in juices and flavor.
  3. Remove chicken and place it in the bottom of a slow cooker. Layer the sliced bell pepper, onion, and minced garlic on top.
  4. Pour in the diced tomatoes with juices and the chicken broth, creating a moist cooking environment.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is thoroughly cooked. Shred the chicken with two forks and return to the pot.
  6. Stir in heavy cream and Parmesan cheese until the sauce is creamy.
  7. Cook pasta according to package instructions until just al dente, drain, and add to the crock pot, mixing well.
  8. Allow to meld for another 15-20 minutes on low before serving hot with freshly chopped parsley.

Notes

You can substitute penne with different pasta shapes. Adjust spice levels to your preference.
