Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (8 oz) block cream cheese, cubed
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup uncooked pasta (penne or rotini)
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about 3-4 minutes until softened.
  2. Add minced garlic and sauté for an additional 30 seconds until fragrant.
  3. Transfer the sautéed onion and garlic mixture to the crock pot.
  4. Place the chicken breasts into the crock pot on top of the mixture.
  5. Pour the chicken broth into the crock pot, ensuring the chicken is partially submerged.
  6. Add the heavy cream and stir gently to combine.
  7. Cube the cream cheese and add it to the crock pot, stirring to help it dissolve.
  8. Sprinkle in the Parmesan cheese and stir to combine.
  9. Add shredded mozzarella and stir again.
  10. Pour the can of undrained diced tomatoes into the crock pot and stir everything well.
  11. Sprinkle in the Italian seasoning, salt, and black pepper, stirring to incorporate.
  12. Cover and cook on low for 6 hours or high for 3 hours.
  13. After cooking, carefully remove the chicken and shred it using two forks.
  14. Return the shredded chicken to the pot and stir.
  15. Add uncooked pasta and stir well.
  16. Cover and cook for an additional 20-30 minutes, or until the pasta is tender.
  17. Stir well and garnish with chopped basil before serving.

Notes

For a lighter option, substitute with low-fat cream cheese or dairy alternatives. Avoid overcooking the chicken by checking during the last 30 minutes.
