Ingredients

- 2 pounds beef stew meat
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 2 tablespoons olive oil (optional)
Instructions
- Brown the beef stew meat in a skillet over medium-high heat with olive oil, if using.
- Transfer the beef into the crockpot and add the chopped carrots, diced potatoes, chopped onion, and minced garlic.
- Pour the beef broth into the crockpot, followed by the tomato paste, thyme, rosemary, salt, and pepper. Stir together.
- Cover the crockpot and cook on low for 8-10 hours or on high for 4-6 hours until the beef is tender.
- Serve hot and enjoy your hearty stew!
Notes
For a thicker stew, mix a few tablespoons of cornmeal or flour with water and stir into the crockpot during the last 30 minutes of cooking. Adjust seasoning before serving to taste.
