- 2 lbs chicken thighs
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) coconut milk
- 1/2 cup tomato sauce
- 1/2 cup plain yogurt
- 2 tbsp butter
- 2 tbsp garam masala
- 1 tsp paprika
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place chicken thighs in the crockpot at the bottom for even cooking.
- Combine chopped onion, minced garlic, grated ginger, coconut milk, tomato sauce, yogurt, butter, garam masala, paprika, turmeric, salt, and pepper in a mixing bowl.
- Pour the mixture over the chicken thighs to coat them well.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Shred the cooked chicken with two forks.
- Return the shredded chicken to the sauce and mix well. Serve over rice or with warm naan, garnished with fresh cilantro.
Notes
Use chicken thighs for moisture and flavor. For a spicier version, add chili powder or diced chilies. Marinating overnight enhances flavor.
