- 1 lb Italian sausage (mild or spicy, to taste)
- 20 oz refrigerated cheese tortellini
- 3 cups fresh spinach
- 28 oz crushed tomatoes
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup heavy cream
- 1 cup shredded Parmesan cheese
- Optional: red pepper flakes for additional heat
Instructions
- Brown the sausage in a skillet over medium heat until it’s browned, then drain excess fat.
- In a 6-quart crockpot, combine the cooked sausage with tortellini, spinach, crushed tomatoes, chicken broth, onion, garlic, basil, oregano, salt, and pepper; stir well.
- Cover and cook on low for 240-300 minutes or on high for 120-180 minutes until the tortellini is tender.
- About 30 minutes before serving, add heavy cream and Parmesan cheese, stir, and let it continue cooking on low.
- Garnish with red pepper flakes before serving, if desired.
Notes
For best results, use high-quality sausage and low-sodium broth. Consider adding extra veggies for more nutrition.
