Description

A comforting Chicken Parmesan soup made in a crockpot, featuring tender chicken, rich tomato base, and gooey cheese.


Ingredients

  • 3 boneless chicken breasts
  • 1 tablespoon chopped garlic
  • 1 28 oz can crushed tomatoes
  • 1 15 oz can tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 cup freshly grated parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz raw rotini pasta
  • ½ cup breadcrumbs
  • 1 tablespoon butter
  • 1½ cups grated mozzarella cheese

Instructions

  1. Load the crockpot with chicken breasts, garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth; stir gently.
  2. Cover and cook on low for about 6 hours or on high for 3-4 hours until the chicken is tender.
  3. Remove the chicken, shred it, and return it to the soup.
  4. Add raw rotini pasta, parmesan cheese, and heavy cream; stir and cook on high for another 30-40 minutes.
  5. Melt butter in a skillet, add breadcrumbs, and toast until golden brown.
  6. Serve soup topped with mozzarella cheese and toasted breadcrumbs.

Notes

For a lighter version, reduce heavy cream or use alternatives. Add vegetables for extra nutrition.
