- 3 boneless chicken breasts
- 1 tablespoon chopped garlic
- 1 28 oz can crushed tomatoes
- 1 15 oz can tomato sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons Italian seasoning
- 4 cups chicken broth
- 1 cup freshly grated parmesan cheese
- 1 cup heavy whipping cream
- 8 oz raw rotini pasta
- ½ cup breadcrumbs
- 1 tablespoon butter
- 1½ cups grated mozzarella cheese
Instructions
- Load the crockpot with chicken breasts, garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth; stir gently.
- Cover and cook on low for about 6 hours or on high for 3-4 hours until the chicken is tender.
- Remove the chicken, shred it, and return it to the soup.
- Add raw rotini pasta, parmesan cheese, and heavy cream; stir and cook on high for another 30-40 minutes.
- Melt butter in a skillet, add breadcrumbs, and toast until golden brown.
- Serve soup topped with mozzarella cheese and toasted breadcrumbs.
Notes
For a lighter version, reduce heavy cream or use alternatives. Add vegetables for extra nutrition.
