Instructions
- Place the chicken breasts in the slow cooker.
- Add chicken broth, diced tomatoes, heavy cream, garlic powder, Italian seasoning, salt, and pepper. Stir to combine all ingredients.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked.
- About 30 minutes before serving, shred the chicken in the pot and stir in the cooked pasta and mozzarella cheese.
- Serve hot, garnished with grated Parmesan cheese and fresh basil.
Notes
For a lighter version, use half-and-half or a plant-based cream. Adjust seasonings to your taste. Add vegetables like spinach for extra nutrition.
