Description

A comforting and easy soup with traditional Mexican flavors, perfect for busy days, featuring tender chicken and zesty spices.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes (with juice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Optional toppings: avocado, cilantro, lime, cheese

Instructions

  1. In a slow cooker, combine the chicken, black beans, corn, diced tomatoes (with their juice), onion, garlic, bell pepper, chicken broth, chili powder, cumin, salt, and pepper. Stir until well mixed.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Before serving, shred the chicken and mix it back into the soup.
  4. Serve hot, topped with tortilla strips and any additional toppings you prefer.

Notes

Use low-sodium chicken broth for better control over saltiness. Feel free to add other vegetables like zucchini or jalapeños.
