- 1 pound ground beef
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat and transfer to the crockpot.
- Add diced potatoes, onion, carrots, celery, chicken broth, garlic powder, and dried thyme to the crockpot.
- Set crockpot to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in heavy cream and shredded cheddar cheese.
- Season with salt and pepper to taste, stir well, and allow to heat through before serving.
