Description

A delightful twist on the classic Caesar salad, featuring tender chicken, fresh greens, and a crispy texture from panko breadcrumbs and Parmesan cheese, perfect for any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 tablespoon butter
  • Optional: sliced cherry tomatoes for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, mix the panko breadcrumbs and Parmesan cheese together.
  3. Season both sides of the chicken breasts with salt and black pepper.
  4. Press the chicken breasts into the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and brown the chicken on each side for about 3 minutes.
  6. Transfer the chicken breasts to a baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Butter one side of each slice of sourdough bread and grill until crispy.
  8. Once the chicken is cooked, slice it into thin strips.
  9. Toss chopped romaine lettuce with Caesar dressing.
  10. Assemble the sandwich with dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled bread.
  11. Serve immediately while warm.

For a quicker version, consider using pre-cooked chicken or chicken tenders.
