- 2 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cups romaine lettuce, chopped
- 4 tablespoons Caesar dressing
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 slices of sourdough bread
- 1 tablespoon butter
- Optional: sliced cherry tomatoes for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a shallow dish, mix the panko breadcrumbs and Parmesan cheese together.
- Season both sides of the chicken breasts with salt and black pepper.
- Press the chicken breasts into the breadcrumb mixture.
- Heat olive oil in a skillet over medium-high heat and brown the chicken on each side for about 3 minutes.
- Transfer the chicken breasts to a baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
- Butter one side of each slice of sourdough bread and grill until crispy.
- Once the chicken is cooked, slice it into thin strips.
- Toss chopped romaine lettuce with Caesar dressing.
- Assemble the sandwich with dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled bread.
- Serve immediately while warm.

For a quicker version, consider using pre-cooked chicken or chicken tenders.
