Description

Refreshing and light wraps filled with creamy cottage cheese and crunchy cucumbers, perfect for any meal or snack.

Ingredients

Scale
  • 2 wraps (Flour or Spinach Wraps; whole wheat or low-carb variants)
  • 1 cup cottage cheese (Substitute with ricotta or Greek yogurt)
  • 1 medium cucumber (Slice or julienne)
  • 1/4 cup red bell pepper (Finely chopped, optional)
  • 1/4 cup fresh dill or parsley (Chopped; swap for basil or cilantro)
  • Salt and pepper (To taste)
  • 1 tablespoon lemon juice (Or white vinegar; apple cider vinegar works too)
  • 1/2 teaspoon garlic powder (Or 1 small clove minced, optional)

Instructions

  1. Prepare cucumbers by washing and slicing them into thin rounds or julienning them.
  2. In a bowl, combine cottage cheese, chopped herbs, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  3. Spread an even layer of the cottage cheese mixture over each wrap.
  4. Distribute cucumber slices and optional bell pepper evenly over the cottage cheese.
  5. Roll up each wrap tightly, slice in half, and serve.

Notes

For a low-carb option, consider using large lettuce leaves instead of wraps. Fresh herbs enhance flavor significantly.
