Description

A creamy, comforting twist on a classic favorite, this Dairy-Free Hamburger Helper combines ground beef and elbow noodles in a savory, dairy-free sauce with rich flavor and satisfying umami from nutritional yeast.


Ingredients

  • 1 medium yellow onion (chopped)
  • 1 pound ground beef
  • 1 tablespoon minced garlic (about 3 to 4 cloves)
  • 1½ teaspoons salt (or to taste)
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ cup nutritional yeast
  • 8-ounce can of tomato sauce
  • 32 ounces beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Franks Red Hot Sauce (or to taste)
  • 1 tablespoon Dijon mustard
  • 3 cups elbow noodles (also called macaroni noodles)
  • ¼ cup dairy-free sour cream (optional, see notes)

Instructions

  1. In a skillet over medium heat, add the olive oil and chopped onion. Let it cook for about 5 minutes until the onion is translucent, then add the ground beef. Cook until the meat is browned and fully cooked, making sure to drain any excess grease before moving on.
  2. Add minced garlic to the skillet and let it cook for about 1 minute to infuse the flavor. Stir in all of the spices, including salt, smoked paprika, garlic powder, onion powder, and black pepper.
  3. Next, pour in the tomato sauce, beef broth, Worcestershire sauce, Franks Red Hot Sauce, and Dijon mustard. Mix everything thoroughly to ensure the ingredients meld together nicely.
  4. Add in the elbow noodles and allow them to cook for 10 to 12 minutes, stirring occasionally until the noodles are tender and the sauce is almost fully absorbed. For a creamier finish, mix in the dairy-free sour cream before serving.

Notes

Use fresh ingredients for the best flavor. Adjust seasonings to taste and remember to drain grease for a healthier option.
