Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking dish.
- Whisk together brown sugar, granulated sugar, eggs, oil, and vanilla until smooth and well combined.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Mix the dry ingredients into the wet mixture until just combined.
- Fold in the grated carrots, ensuring they’re evenly distributed.
- Pour the batter into the prepared baking dish, smoothing the top, and bake for 28-32 minutes.
- Allow the bars to cool completely in the pan.
- Beat together cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract.
- Spread the frosting over the cooled bars and sprinkle with chopped pecans if desired.
