Ingredients

  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 1/2 cups finely grated carrots
  • 8 oz cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and a pinch of salt.
  3. In a large bowl, beat the eggs, both sugars, vegetable oil, and a hint of vanilla extract until smooth.
  4. Slowly combine the dry ingredients with the wet, mixing until just combined, then fold in the grated carrots.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes; a toothpick should come out clean.
  6. Allow the bars to cool completely before topping with cream cheese frosting.

Notes
