- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice
- 3 large Eggs (Room temperature)
- 1/2 cup Coconut Oil (Melted)
- 8 oz Cream Cheese (Room temperature)
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip (Thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (For glaze)
- 1/2 cup Granulated Sugar
- 2 tbsp Cornstarch
- 1/4 cup Water (For slurry)
- 1 cup Sweetened Coconut Flakes (For garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the batter by combining strawberry cake mix, guava nectar, eggs, and melted coconut oil in a large bowl. Mix until smooth.
- Bake the cake in a greased 9×13 inch baking dish for 25-30 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Make the cream cheese frosting by beating cream cheese, sugar, and vanilla extract together until smooth; fold in the thawed Cool Whip.
- Prepare the glaze by combining guava nectar, sugar, and cornstarch in a saucepan. Whisk in water and bring to a boil, simmering until thickened, then remove from heat.
- Assemble the cake by spreading cream cheese frosting on top, drizzling with guava glaze, and sprinkling with coconut flakes.
