  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • 1/4 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Crushed mint chocolates (e.g., Andes) or chocolate curls (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, eggs, buttermilk, vegetable oil, and vanilla extract until smooth. Gradually add the dry ingredients and mix until just combined, then stir in hot water until smooth.
  4. Divide the batter evenly between the two greased cake pans and bake for 30-35 minutes. Let cool completely.
  5. For the mint cheesecake layer, beat cream cheese with sugar until smooth, then add eggs, peppermint extract, and sour cream. Mix well and add food coloring if desired.
  6. Pour the cheesecake mixture into a greased 9-inch springform pan and bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly. Let cool completely.
  7. For the chocolate ganache, heat heavy cream until steaming, remove from heat, and stir in chocolate chips until smooth.
  8. Assemble the dessert with one cake layer on a platter, topped with the mint cheesecake layer, then the second cake layer.
  9. Drizzle chocolate ganache over the top, allowing it to drip down the sides.
  10. Garnish with crushed mint chocolates and fresh mint leaves. Chill in the refrigerator for at least 2 hours before serving.
