- 1/2 cup coconut cream (thick and chilled)
- 1/4 cup coconut oil (melted)
- 1 tablespoon honey or maple syrup

- Fresh raspberries
- Extra shredded coconut (for rolling)
Instructions
- Combine shredded coconut, coconut cream, melted coconut oil, honey or maple syrup, and vanilla extract in a mixing bowl. Stir until well incorporated.
- Gently fold in fresh raspberries, keeping some whole for bursts of flavor.
- Scoop small amounts of the mixture and roll them into balls about 1-inch in diameter.
- Roll each ball in extra shredded coconut to coat.
- Place on a parchment-lined tray and chill in the fridge for about 25 minutes before serving.
Notes
For the best texture, roll the balls gently. Adjust sweetness based on preference and consider adding a pinch of sea salt.
