Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup coconut cream (thick and chilled)
  • 1/4 cup coconut oil (melted)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Fresh raspberries
  • Extra shredded coconut (for rolling)

Instructions

  1. Combine shredded coconut, coconut cream, melted coconut oil, honey or maple syrup, and vanilla extract in a mixing bowl. Stir until well incorporated.
  2. Gently fold in fresh raspberries, keeping some whole for bursts of flavor.
  3. Scoop small amounts of the mixture and roll them into balls about 1-inch in diameter.
  4. Roll each ball in extra shredded coconut to coat.
  5. Place on a parchment-lined tray and chill in the fridge for about 25 minutes before serving.

Notes

For the best texture, roll the balls gently. Adjust sweetness based on preference and consider adding a pinch of sea salt.
