Description

A hearty and flavorful black bean curry that comes together in just 30 minutes, perfect for any occasion.


Ingredients

  • 1 Medium Chopped Onion
  • 4 cloves Crushed Garlic
  • 1 tablespoon Fresh Ginger
  • 4 ยฝ cups Canned Black Beans (drained)
  • 2 teaspoons Garam Masala
  • 1 teaspoon Cumin (optional)
  • ยฝ teaspoon Ground Coriander
  • 2 teaspoons Turmeric
  • ยผ teaspoon Cayenne Pepper
  • 14 ounces Crushed Tomatoes
  • 2 cups Vegetable Stock
  • 1 cup Heavy Cream
  • 1 tablespoon Coconut Sugar
  • 1 cup Chopped Cilantro
  • ยฝ teaspoon Sea Salt
  • ยผ teaspoon Ground Black Pepper
  • Basmati Rice (for serving)
  • Lime Wedges (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, and sautรฉ for about 5 minutes until it becomes translucent.
  2. Stir in the crushed garlic and fresh ginger, cooking for another minute until fragrant.
  3. Add the black beans, garam masala, cumin, ground coriander, turmeric, and cayenne pepper. Mix well and cook for another 2-3 minutes, allowing the spices to toast slightly.
  4. Pour in the crushed tomatoes and vegetable stock. Bring the mixture to a simmer, stirring occasionally. Let it cook for about 10 minutes.
  5. Stir in the heavy cream, coconut sugar, cilantro, sea salt, and black pepper. Simmer for an additional 5 minutes, allowing the flavors to meld.
  6. Serve hot over cooked basmati rice. Garnish with lime wedges.
