- 1 Medium Chopped Onion
- 4 cloves Crushed Garlic
- 1 tablespoon Fresh Ginger
- 4 ยฝ cups Canned Black Beans (drained)
- 2 teaspoons Garam Masala
- 1 teaspoon Cumin (optional)
- ยฝ teaspoon Ground Coriander
- 2 teaspoons Turmeric
- ยผ teaspoon Cayenne Pepper
- 14 ounces Crushed Tomatoes
- 2 cups Vegetable Stock
- 1 cup Heavy Cream
- 1 tablespoon Coconut Sugar
- 1 cup Chopped Cilantro
- ยฝ teaspoon Sea Salt
- ยผ teaspoon Ground Black Pepper
- Basmati Rice (for serving)
- Lime Wedges (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, and sautรฉ for about 5 minutes until it becomes translucent.
- Stir in the crushed garlic and fresh ginger, cooking for another minute until fragrant.
- Add the black beans, garam masala, cumin, ground coriander, turmeric, and cayenne pepper. Mix well and cook for another 2-3 minutes, allowing the spices to toast slightly.
- Pour in the crushed tomatoes and vegetable stock. Bring the mixture to a simmer, stirring occasionally. Let it cook for about 10 minutes.
- Stir in the heavy cream, coconut sugar, cilantro, sea salt, and black pepper. Simmer for an additional 5 minutes, allowing the flavors to meld.
- Serve hot over cooked basmati rice. Garnish with lime wedges.
