Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic, Italian seasoning, salt, pepper, and red chili flakes. Cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Add the chicken breasts and sun-dried tomatoes, cooking until the chicken is fully cooked, about 15 minutes.
  4. Remove the chicken, shred it with two forks, and return to the pot. Add the dry pasta and cook until al dente.
  5. Mix half-and-half with cornstarch until smooth, then stir into the pot. Add the chopped spinach and stir until wilted.
  6. Serve hot, topped with a dollop of ricotta, a sprinkle of Parmesan, and shredded mozzarella.
